SALT
FRESHLY GROUND BLACK PEPPER
GRATED ONION
1 CUP (250ml) WATER
1/4 CUP VINEGAR
LEMON JUICE
3 PEPPERCORNS
PARSLEY
1 CLOVE
1 BAY LEAF
Sprinkle
fish with onion, parsley, lemon juice, pepper and salt and
place in a buttered ovenproof dish. Pour oven water, vinegar,
peppercorns, clove and bay leaf over trout. Cover with buttered
papper and bake in a moderate oven for 15 minutes or until
nearly cooked, remove paper. Pour off liquid, strain, thicken,
and serve separately. Trout can be whole, allow 20 minutes
per 1 kg (10 minutes per pound)
